Choco-Mint Mousse

    1/2 cup raw cacao beans (or use raw cacao powder)
    3 tbls hemp seed
    4-6 dates, soaked 2-4 hours
    1/3 cup soak water from dates
    1/2 vanilla bean
    3 tbls carob
    1 avocado
    Dash of sea salt
    2 or 3 drops peppermint essential oil — Try orange oil too!

    Blend cacao beans into powder with a high powered blender. Allow to cool if the blender heats up during this process. You do not want to “cook” the beans. Put avocado in food processor and process until creamy. Add blended beans to processor. Blend soaked dates with soak water, salt, hemp seeds, and vanilla until creamy. Pour into food processor. Add carob powder. Process until creamy. While processing, add two or three drops peppermint essential oil and process a few seconds more. Chill then serve in a bowl or spread atop a raw crust for a pie— 1 cup soaked then dried walnut/1 cup soaked then dried pecans/ 1/2 lb dates/1/2 tsp salt/1/4 cup agave or honey/ 1tsp vanilla or whole pod. Process until a sticky crumble. Press into pan and serve or dehydrate 12 hours at 105 *F or until dry.

    Cacao is one of those foods whose nutritional value changes so significantly once heated, you may as well avoid the cooked chocolate entirely. Luckily, the raw cacao bean is so loaded with antioxidants, magnesium, enzymes, amino acids, B vitamins, and properties that cause the release of serotonin—the feel good chemical—you can eat it anytime and all the time!

    Hemp seeds offer the best balance of omega 3, 6, and 9 of any other seeds. These creamy seeds contain all known amino acids including the 9 essential amino acids the body cannot produce. Besides being a balanced form of protein, hemp seeds contain Edestin, a protein needed to create your body’s DNA. Hemp seeds reduce dry skin, improve inflammatory conditions, can lower LDL, and improve immune function!

    Avocadoes are down right delicious but they’re also super healthy. They are a great source of vitamin K and folic acid and supply essential fatty acids (especially Omega 6) to support connective tissue, cardiovascular activity, and mental acuity. The avocado resembles a womb, suggesting it is excellent to balance hormones and protect the cervix.

    Essential oil of Peppermint is most commonly used for its fragrance and flavor in candy but it can also be used medicinally in small doses. It can strengthen the digestive system and is anti-inflammatory, antibacterial, and calming to the nerves. Inhaling mint can also help with headaches, colds, and sleeplessness. Do not use when pregnant or around children under two years of age.
